Meat mix:
-1/2 lb dried pinto beans
-1 1b ground beef, cooked
-abt 1/2 cup ketchup, to taste
-abt 1/2 cup brown sugar, to taste
-1-2 pkg taco seasoning, to taste
1. Soak pinto beans in 4 cups of water in crock pot over night (6-8 hours).
2. Rinse and replace in crockpot with 3 cups of fresh water. Cook on high for 6 hours in crock pot.
3. In the last hour, add ground beef, ketchup, brown sugar, and taco seasoning to desired consistency.
Bread pieces (bread machine recipe, but you can substitute in pre-made roll dough):
-7/8 cup water
-1 large egg
-3 1/4 cup bread flour
-1/4 cup sugar
-1 tsp salt
-3 Tbsp dry milk
-1/4 cup butter
2 tsp rapid rise yeast
1. Add ingredients (in the order written) to bread machine, making a well for the yeast in the middle of the flour. Set course for "quick dough."
2. When dough is finished, seperate into 24 equal balls of dough. Allow to rise 30 minutes to an hour. Flatten each ball to the thinness of pie crust.
3. Fry dough in Crisco, turning once (they burn easily!). Cool on a paper towel over a plate.
4. Serve meat mix over bread pieces along with other taco toppings (cheese, sour cream, etc). Makes 24 fried pieces.
Elephant ears:
1. Make above dough recipe and fry pieces as directed.
2. After you take a piece out of the pan, sprinkle both sides with cinnamon. Cool on a paper towel over a plate.
